Ingredients
- 2 cups all-purpose flour
- 1/4 cup granulated sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1/2 cup cold unsalted butter, cubed
- 1/2 cup heavy cream
- 1/4 cup honey
- 1 large egg
- 1 tablespoon dried culinary lavender
- 1 tablespoon milk (for brushing)
Directions
Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
In a large bowl, whisk together flour, sugar, baking powder, and salt.
Using a pastry cutter or your fingers, cut the cold butter into the flour mixture until it resembles coarse crumbs.
In a separate bowl, whisk together cream, honey, and egg.
Add the wet ingredients to the flour mixture and stir until just combined.
Gently fold in the lavender buds.
Turn the dough out onto a lightly floured surface and knead gently 2-3 times.
Pat the dough into a 1-inch thick circle and cut into 8 wedges.
Place scones on the prepared baking sheet and brush with milk.
Bake for 12-15 minutes, until golden brown and a toothpick inserted comes out clean.
Cool on a wire rack for 5 minutes before serving.
